Moon cakes

In mid-autumn occasions, people in my country are in hurry to prepare MOON CAKES for gifts to children, elders or their close friends. Especially, nowadays woman prefer to doing handmade cakes by themselves. Moreover, this kind of cake is traditional one since our ancient time then our next generations adapt and follow according to the great great parent’s customs.

In this year, it is a special case, my city is in social quarantine, therefore almost people have made moon cakes and celebrate event within their families.

In the past, the traditional cake is only mixed filling, but now people make many different kinds of cake such as bean cakes, salted-egg cakes, and so on.

Generally, moon cake is a traditional cuisine in special occasion which is Mid-autumn and in this event, almost people celebrate a small party which have moon cake and hot tea .

Steamed rice cake – a signature food in Autumn

These days, Hanoi has isolated for whole 2 months when autumn comes. Therefore, we only stay at home and cook by ourselves, however I still have missed some special foods of Autumn such as hot pot, snail noodle, hot steamed rice cake and so on. About hot steamed rice cake, it is a signature food of Hanoi in autumn, in fact, this is very simple to cook but which has its own taste, especially eating in cool weather. In additional, the steamed rice cake of Hanoi is different to other provinces.

Here is my steam rice cake which cook by myself to condense our missing Hanoi autumn’s foods

Hot steamed rice cake

To begin with this dish, it is made from rice and flour powder to create a mixture then steaming to merge and make it ripe. For the topping, it is including pork,fried onion, pepper, mushroom. however the specialty is soup which is stock from rib, after that I put in fish sauce, sugar, vinegar, garlic by suitable recipe, of course I must cook it to be spoil. Because I like eating peanuts so I roasted adding my bowl.

Actually, cooking steamed rice cake is very simple and enjoying it in fall season which is amazing.

Bun dau mam tom

Bun dau mam tom (fried tofu, shrimp paste, and noodles) is one of signature foods in Hanoi. Any visitors must try this dish when coming to our capital, we could find it at the hold of the wall to sell this one every streets, or also vendors sit a corner of any roads.

The special one is shrimp paste which mainly made from shrimp or moi (it is a kind of tiny shrimp) and salt. After the nature fermented processing, this sauce is created a typical favor and color. There are 3 shrimp paste types: thick, paste and liquid which are based on the rate of salt and the sun exposure. When eating, we should add more lemon, chili to push up its smell.

Besides main foods, fried tofu, shrimp paste, noodles, people could add more some other foods such as boiled shoulder pork, pork roll, fried pork’s guts…

For tofu, it is fried all 6 sides however its inside still white and soft, and bean tasting. After deep it into shrimp paste bowl, it’s absolutely mouthwatering.

In case, you can’t eat shrimp paste, you could change to fish sauce. Anyway shrimp paste is quite strong smell and not suitable for people don’t like that one.

If you ask any local people in Hanoi about the signature foods, certainly, they will tell you “bun dau mam tom” which is a special one to other areas.

My breakfast with Cao Bang’s foods

Cao Bang is a Northern province with many fantastic places as Ban Gioc waterfall, Pac Po cave, Lenin stream.. Besides that, there are a lot of delicious food in this one.

Last weekend, I missed Cao Bang foods, but I can’t travel while Covid is striking widely in my country, then I found out a hole in the wall in my city where mainly cook those foods.
